Brown Sugar-Soy Glazed Salmon with Sesame Green Bean Salad
Ingredients:
4 pieces of Salmon
Glaze
1/2 cup brown sugar
1/4 cup soy sauce (low sodium if available)
1 tbsp rice wine vinegar
1/4 tsp 5 spice powder
2 tsp Dijon mustard
3 tbsp canola oil
Salad
1 lb green beans, tops removed
1 cup Napa cabbage, shredded
¼ red onion, sliced thin
1 red pepper, stems and seeds removed, sliced thin
Sesame dressing
3 tbsp soy sauce (low sodium if available)
1 tbsp sesame oil
3 tbsp rice wine vinegar
4 tsp honey
1 tsp ginger, finely chopped
¼ cup canola oil
2 tsp Dijon mustard
To serve
2 green onions, thinly sliced
1 tbsp toasted sesame seeds
Lemon wedges
How To Make It:
Preheat oven to 375 degrees Fahrenheit.
For the dressing, combine all ingredients in a sealed mason jar and shake until combined.
For the salad, blanch beans in salted boiling water for 4-5 minutes until tender, but with a bit of crunch. Strain and cool immediately in ice water or under cold running water. Drain and pat beans dry with a paper towel. Toss beans with prepared onion, red pepper, cabbage and sesame dressing.
For the glaze, combine all ingredients in a mixing bowl.
Place salmon on parchment lined baking sheet and pour over glazer. Bake at 375 degrees, basting with glaze from the pan every few minutes, approximately 10 minutes. Salmon is done when it flakes apart easily in the centre when poked with a fork.
